Jackfruit Tacos with Cilantro-Lime Slaw

Jackfruit has a meaty texture and a mild flavor that takes well to seasonings, so it makes a great substitute for pulled pork or carnitas. The Jackfruit Company’s Tex Mex-seasoned jackfruit is simple to prep and makes a perfect meatless filling for these vegetarian (and vegan-friendly) tacos.
Finely grated zest and juice of 1 medium lime
3 tbsp. mayonnaise (vegan or egg-based)
1/4 tsp. kosher salt, more to taste
2 cups shredded green cabbage or coleslaw mix
2 scallions, white and light-green parts only, thinly sliced
2 tbsp. chopped fresh cilantro
2 10-oz. packages The Jackfruit Company Tex-Mex Jackfruit
8 to 10 soft white corn tortillas
Elm City Market fresh salsa (tomato, mango, or pineapple) for serving
Diced avocado, for serving
Shredded Monterey Jack or crumbled queso fresco, optional
1. In a medium bowl, whisk the lime zest and juice, mayonnaise, and salt. Stir in the cabbage, scallions, and cilantro. Let sit while you prepare the tacos.
2. Warm the jackfruit according to the package directions.
3. Warm the tortillas either on a cast-iron skillet or directly over a gas flame for a few seconds, turning once.
4. Fill the tortillas with jackfruit, and serve the tacos topped with the slaw, fresh salsa, and cheese if desired.
